Beef Shami Kabab Recipe:
Makes ∼15-18 kababs
Ingredients:
- Beef: 500g boneless, with a little fat, cubed
- Chana daal: 1 cup, soaked 30 min
- Onion: 2 medium, sliced
- Ginger-garlic paste: 2 tbsp
- Whole spices: 1 tsp cumin, 1 tsp coriander seeds, 6-8 black pepper, 4 cloves, 2 green cardamom, 1 black cardamom, 1 inch cinnamon
- Red chili powder: 1.5 tsp
- Turmeric: 0.5 tsp
- Salt: 1.5 tsp
- Eggs: 2, beaten for binding
- Fresh: Handful mint + coriander, 3-4 green chilies, chopped
- Oil: For shallow frying
Method:
1. Boil: Add beef, soaked daal, all whole spices, ginger-garlic, salt, chili, turmeric + 4 cups water. Cook on low 45-60 min till beef + daal are tender and water dries up.
2. Dry roast:
Once water evaporates, bhuno on high 2-3 min to remove moisture. Let it cool.
3. Grind:
Remove whole spices. Grind beef+ daal mix to a smooth paste. Add chopped mint, coriander, green chili. Mix in 1 beaten egg.
4. Shape:
Make small round patties. Press lightly in center.
5. Fry:
Dip each patty in remaining beaten egg. Shallow fry on medium heat 3-4 min each side till golden brown and crispy.
Serve hot with mint chutney, sliced onions + lemon.
