Recipe: Palak Chicken Gosht
Serves: 4
Time: ∼45 minutes
Ingredients:
- Chicken: 500g, bone-in pieces
- Palak/Spinach: 500g, blanched and blended to a paste
- Onion: 2 medium, finely sliced
- Tomato: 2 medium, pureed
- Yogurt: 1/2 cup, whisked
- Ginger-garlic paste: 2 tbsp
- Green chilies: 3-4, slit
- Spices: 1 tsp cumin, 1 tsp coriander powder, 1/2 tsp turmeric, 1 tsp red chili powder, 1 tsp garam masala, salt to taste
- Oil/Ghee: 4 tbsp
- For garnish: Ginger juliennes, butter, lemon juice
Steps:
1. *Prep the palak:
Boil spinach for 2 min, drain in cold water, then blend to a smooth paste. Keeps the color bright.
2. Bhuna masala:
Heat oil, add cumin. Saute onions till golden. Add ginger-garlic paste, cook 1 min.
3. Cook chicken:
Add chicken, turmeric, chili, coriander, and salt. Fry 5-6 min. Add tomato puree and yogurt. Cook till oil separates.
4. Add palak:
Pour in the spinach paste + 1/2 cup water. Simmer 15 min on low till chicken is tender and gravy thickens.
5. Finish:
Add garam masala, green chilies, and a knob of butter. Splash lemon juice before serving.
Serve with:
Hot naan, roti, or steamed rice. The ginger juliennes on top make it restaurant-style.
