Super soft, milky, and it literally drinks the milk 😋


Three Milk Cake - Recipe

9x13 inch pan, serves 10-12


For the sponge cake

- Eggs: 5 large, separated

- Sugar: 1 cup, divided

- Flour: 1 cup

- Baking powder: 1 tsp

- Vanilla: 1 tsp

- Salt: 1/4 tsp

- Milk: 1/4 cup


For the "Three Milks"

- Evaporated milk: 1 can / 400ml

- Condensed milk: 1 can / 400ml  

- Heavy cream / Full cream milk: 1 cup


For topping

- Whipping cream: 1 1/2 cups cold

- Sugar: 3 tbsp

- Cinnamon powder: for dusting


Step by Step


Step 1: Bake sponge  

Preheat oven to 175°C / 350°F. Grease a 9x13 pan.  

Beat egg whites + 1/2 cup sugar till stiff peaks.  

Beat egg yolks + remaining 1/2 cup sugar till pale. Add vanilla + milk.  

Fold in flour + baking powder + salt. Then gently fold in egg whites.  

Pour in pan. Bake 25-30 min. Cool completely and poke holes all over with a fork.


Step 2: Make milk mix

Whisk evaporated milk + condensed milk + heavy cream together.


Step 3: Soak

Slowly pour all the milk mixture over the cooled cake. It looks like a lot but the cake drinks it up.  

Cover and refrigerate at least 4 hours, best overnight.


Step 4: Top it  

Whip cold whipping cream + sugar till stiff peaks. Spread over cake.  

Dust with cinnamon. Serve cold.


Pro tips

- Don’t skip chilling: The longer it soaks, the better

- Desi twist: Add a few drops of rose water to the milk mix

- Storage: Keeps 3-4 days in fridge


Preheat Time: 10-15 minutes 👌

- Temple (: Turn the oven on to 175°C / 350°F

- Time: Turn the oven on before you start making the batter. By the time you beat the eggs and mix the flour, the oven will be hot — usually it takes 10-15 min

- How to check: Most ovens have a light or beep when they reach the temperature


Important tip

Tres leches sponge is fluffy, so it’s important to preheat the oven. Cold oven = the cake will become dense and won’t rise properly.
