3 cups cooked basmati rice, preferably chilled

1 tbsp oil

½ cup carrots, finely chopped

½ cup cabbage, shredded

¼ cup capsicum, chopped

2 spring onions, chopped

2–3 tbsp Schezwan sauce

1 tbsp soy sauce

½ tsp vinegar

½ tsp black pepper

Salt, to taste

1. Cook the chicken:

Mix chicken with soy sauce, ginger-garlic paste, black pepper and salt. Heat oil in a wok and cook the chicken until golden and completely cooked through.

Add Schezwan sauce, soy sauce and vinegar. Toss everything together.

4. Add rice:

Gently add the chilled cooked rice. Toss on high heat until the rice is evenly coated with the sauce.

5. Finish:

Add black pepper and adjust salt. Toss in spring onions and cook for another 1–2 minutes.

6. Serve hot:

Garnish with extra spring onions and serve immediately.

πŸ”₯ Tips for Restaurant-Style Flavor:

Use cold/chilled cooked rice so the grains don't become mushy.

Cook everything on high heat.

Don't overcook the vegetables; a little crunch tastes better.

Adjust Schezwan sauce according to your preferred spice level.

A drizzle of toasted sesame oil at the end can add extra aroma.
