- 3–4 green cardamoms

- 1 black cardamom

- 1 bay leaf

- 1 teaspoon red chili powder

- ½ teaspoon turmeric powder

- 1 teaspoon coriander powder

- ½ teaspoon garam masala

- Salt to taste

- 3 cups water (adjust according to rice variety)

- Fresh coriander and mint for garnish


 Instructions:

 Step 1: Prepare the Rice

Wash basmati rice thoroughly until the water runs clear. Soak for 20–30 minutes, then drain.

Step 2: Fry the Whole Spices:

Heat oil in a large pot. Add cumin seeds, cinnamon, cloves, green cardamoms, black cardamom, and bay leaf. Sauté for a few seconds until fragrant.

 Step 3: Cook the Onion Masala:

Add sliced onions and fry until golden brown. Add ginger-garlic paste and cook for 30 seconds. Add chopped tomatoes, green chilies, red chili powder, turmeric, coriander powder, and salt. Cook until the tomatoes soften and the oil begins to separate.

Step 4: Add Chickpeas:

Add boiled chickpeas and mix well with the masala. Cook for 3–4 minutes so the chickpeas absorb the spices.

Step 5: Add Water:
