🥘 Ingredients:
500g fresh bhindi (okra)
2 medium onions, sliced
2 medium tomatoes, chopped
2 green chilies, sliced
3 tbsp cooking oil
1 tsp cumin seeds
1 tsp ginger-garlic paste
½ tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
½ tsp cumin powder
½ tsp garam masala
Salt to taste
½ tsp dried fenugreek leaves (optional)
Fresh coriander for garnish
👩🍳 How to Make Bhindi Masala:
1. Prepare the bhindi:
Wash the bhindi thoroughly and dry it completely with a kitchen towel. Cut off the ends and slice the bhindi into medium pieces.
2. Fry the bhindi:
Heat 1–2 tablespoons of oil in a pan. Add the sliced bhindi and cook over medium heat for 6–8 minutes, stirring occasionally, until it becomes slightly crisp. Remove and set aside.
3. Prepare the masala:
Add the remaining oil to the same pan. Add cumin seeds and let them sizzle. Add sliced onions and cook until lightly golden.
4. Add aromatics and spices:
Add ginger-garlic paste and green chilies. Cook for 1 minute. Add tomatoes, turmeric, red chili powder, coriander powder, cumin powder, and salt.
5. Cook the tomato mixture:
Cook until the tomatoes become soft and the oil starts separating from the masala.
6. Add bhindi:
Add the fried bhindi to the masala and gently mix everything together. Cover and cook on low heat for another 5–7 minutes.
7. Finish and serve:
Sprinkle garam masala and dried fenugreek leaves. Garnish with fresh coriander and serve hot.
