Creamy Garlic Mushroom Rice
The ultimate one-pot comfort food — 30 minutes, 6 main ingredients
This is my go-to when I want something that feels fancy but is actually super easy. Earthy mushrooms, buttery garlic rice, and a little parmesan to bring it all together. No cream needed, but you can add it!
Prep: 10 mins | Cook: 20 mins | Serves: 4
Ingredients :
- Rice: 1.5 cups white basmati or jasmine rice, rinsed
- Mushrooms: 300g (10 oz) button or cremini mushrooms, sliced
- Aromatics: 1 small onion finely diced, 3 garlic cloves minced
- *Fat:* 2 tbsp butter + 1 tbsp olive oil
- *Liquid:* 3 cups vegetable or chicken broth, hot
- Cheese: 1/3 cup grated parmesan (optional but recommended)
- Herbs & Seasoning: 2 tbsp fresh parsley chopped, 1/2 tsp black pepper, 3/4 tsp salt, pinch of thyme
• Method:
1. Sauté the Mushrooms (The key step)
Heat olive oil and 1 tbsp butter in a large pan or skillet over medium-high heat. Add mushrooms in a single layer. Don't stir for 2-3 minutes — let them get golden brown. Then stir and cook another 3 minutes.
2. Build Flavor
Push mushrooms to the side. Add remaining butter, onion and garlic. Sauté for 2 minutes until soft. Add a pinch of thyme.
3. Toast the Rice:
Add the rinsed rice to the pan. Stir for 1 minute so every grain gets coated in butter. This makes it extra fluffy.
4. Simmer:
Pour in the hot broth, salt and pepper. Bring to a boil, then lower heat to low, cover, and cook for 15 minutes. Don't lift the lid!
5. Rest & Finish
Turn off heat, keep lid on for 5 minutes. Fluff with a fork, stir in parmesan and parsley. Top with extra sautéed mushrooms for that blog-worthy look.
This Creamy Mushroom Rice is buttery, garlicky, and loaded with golden-brown mushrooms. It’s made in one pot, ready in under 30 minutes, and tastes like a restaurant-style mushroom risotto without all the stirring. Perfect with grilled chicken or as a cozy vegetarian main.
Storage:
Fridge 3 days. Freezes well for 1 month. Reheat with a splash of water.
Variations:
- Vegan: Use olive oil only + nutritional yeast instead of parmesan
- Creamy version:
Stir in 1/4 cup heavy cream at the end
- Pakistani style:
Add 1 tsp black pepper, 1/2 tsp cumin, and green chilies
