🥔 Ingredients:

- 3 medium potatoes, peeled and cut into cubes

- 1½ cups fresh or frozen green peas

- 1 medium onion, finely chopped

- 2 medium tomatoes, chopped or pureed

- 2–3 green chilies, sliced

- ½ cup cooking oil

- 1 teaspoon ginger-garlic paste

- ½ teaspoon cumin seeds

- ½ teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 teaspoon coriander powder

- ½ teaspoon cumin powder

- Salt to taste

- ½ teaspoon garam masala

- 2 cups water, or as needed

- Fresh coriander, chopped, for garnish

🍲 How to Make Aloo Matar:

1. Prepare the Masala:

Heat oil in a pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.

Add chopped onion and cook until light golden. Add ginger-garlic paste and sauté for another minute.

2. Add Tomatoes & Spices

Add the tomatoes, turmeric, red chili powder, coriander powder, cumin powder, and salt.

Cook until the tomatoes soften and the oil starts separating from the masala.

3. Add Potatoes:

Add the cubed potatoes and green chilies. Mix well so the potatoes are coated with the masala.

Cook for 3–4 minutes.

4. Add Green Peas:

Add the green peas and mix everything together.

Pour in about 2 cups of water. Cover the pot and cook on medium-low heat until the potatoes become tender.

5. Finish the Curry:

Once the potatoes are cooked, add garam masala and fresh coriander.

Simmer uncovered for another 2–3 minutes until the gravy reaches your preferred consistency.
