Ingredients:
- 1 cup cauliflower, cut into florets
- 1 cup potatoes, cubed
- ½ cup carrots, sliced
- ½ cup green beans, chopped
- ½ cup green peas
- 1 medium onion, finely chopped
- 2 medium tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 2–3 green chilies, chopped
- 3 tbsp cooking oil
- 1 tsp cumin seeds
- 1 tsp red chili powder
- ½ tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp garam masala
- Salt to taste
- ½ cup water
- Fresh coriander for garnish
How to Make Mix Vegetable
1. Heat oil in a large pan and add cumin seeds. Let them sizzle for a few seconds.
2. Add chopped onion and sauté until lightly golden.
3. Add ginger-garlic paste and green chilies. Cook for about 1 minute.
4. Add chopped tomatoes and cook until they become soft and the oil starts separating.
5. Add red chili powder, turmeric, coriander powder and salt. Mix well.
6. Add potatoes, carrots and green beans. Stir-fry for 5–7 minutes.
7. Add cauliflower and peas. Pour in ½ cup water, cover the pan and cook on medium-low heat until the vegetables are tender.
8. Sprinkle garam masala and fresh coriander. Give everything a final mix and cook for another 1–2 minutes.
