Chicken Corn Soup is a warm, comforting and flavorful soup made with tender shredded chicken, sweet corn, eggs and a deliciously seasoned chicken broth. It is quick and easy to prepare and makes a perfect appetizer or light meal, especially during cold weather.

Ingredients:

- 1 cup boiled and shredded chicken

- 1 cup sweet corn

- 4 cups chicken stock

- 1 egg

- 2 tbsp cornflour

- ¼ cup cold water

- 1 tbsp soy sauce

- 1 tbsp vinegar

- ½ tsp black pepper

- ½ tsp white pepper

- ½ tsp salt, or to taste

- 1 tsp ginger-garlic paste

- 1 tbsp oil

- 2 tbsp chopped spring onions

- 1–2 green chilies, finely chopped (optional)

Instructions:

1. Prepare the chicken:

Boil the chicken until completely cooked. Shred it into small pieces and set aside.

2. Cook the soup base:

Heat oil in a large pot. Add ginger-garlic paste and sauté for about 30 seconds. Add the chicken stock and bring it to a gentle boil.

3. Add chicken and corn:

Add the shredded chicken and sweet corn. Season with salt, black pepper and white pepper. Simmer for 5–7 minutes.

4. Thicken the soup:

Mix cornflour with cold water until smooth. Slowly pour the mixture into the simmering soup while continuously stirring. Cook until the soup becomes slightly thick and silky.

5. Add the egg:

Beat the egg in a bowl. Slowly drizzle it into the hot soup while stirring gently in one direction. This creates beautiful egg ribbons throughout the soup.

6. Add final flavors:

Stir in soy sauce, vinegar and chopped green chilies if using. Taste and adjust the seasoning.

7. Garnish and serve:

Turn off the heat and garnish with chopped spring onions and a little black pepper. Serve hot.
